Crockpot Swiss Steak

not terribly exotic, but easy and low point.

2 cups sliced onion (or skip it if you are me)
1 cup each sliced carrot and celery
put into crock pot

2 tbsp flour, dash salt and pepper
mix in freezer bag

2 lbs boneless round steak - cut into 8 pieces
toss in flour mix, then brown in frying pan sprayed well with cooking spray or touch of oil. works well to do in 2 batches. then put in crockpot.

in mixing bowl, combine
1/2 cup beef broth
2 tbsp flour
14 oz can diced tomatoes
1/2 tsp dried thyme
then pour over steak

cover and cook on low for 8-10 hours, or high for 4-5. 8 servings 4 point/serving
I served with potatoes one night, and rice the next. With veggies, it brought the whole meal to 7 or 8 points, depending on how you do the potatoes.
